- 1 3 lb chicken cut into pieces
- 1 1/2 cups buttermilk
- 2 cups flour
- 4 cups oil, for frying
- salt and pepper to taste
1. Marinate chicken in a gallon ziplock bag, with buttermilk mixed with 1 tsp of salt and 1/2 tsp pepper. Marinate for 2 to 24 hours.
2. Heat oil to 350 degrees, and cook chicken covered for 5 minutes, skin side down. Rearrange if necessary, and cook another 5 minutes.
3. Remove lid and cook uncovered for 10 to 12 minutes, while turning chicken.
