A pasta dish with a Mediterranean twist.
Ingredients
Tuscan Salsa
12 oz. sun dried tomatoes
1 cup capers
2 jars roasted red peppers
1/2 cup toasted pine nuts
1/2 –1 Tbsp. roasted garlic
1/2 cup olive oil
1 jar pitted kalawiata olives
Pasta
8 oz. cooked pasta
4 green onions
1/4 cup feta cheese
4 oz. cooked chicken
Dry vermouth
Directions
Per Person
1. Combine all of the Tuscan salsa ingredients.
2. Saute 1/2 cup of Tuscan salsa.
3. Add 1/4 cup dry vermouth and chicken breast.
4. Add green onions and top with feta cheese.
