Halibut Filets With Shrimp Florentine Stuffing

Ingredients

  • 6 oz. shrimp
  • 10-12 ounces Halibut
  • Salt, pepper, garlic to your taste
  • 1/2 tsp. old bay seasoning
  • 1/2 cup bread crumbs
  • 1 oz. cream cheese
  • 1/2 oz. butter
  • 1/2 cup spinach leaves
  • 1 Tbsp. lemon (juice)

    Directions

    1. Add dry bread crumbs to bowl adding cooked and diced shrimp, add salt, pepper, garlic, and old bay, add egg and blend well. Add cream cheese and butter cubes and finish blending.



    2. Long ways cut top on fillet off carefully and cut slit in center of top piece. Season both pieces with salt, pepper, garlic, old bay and place stuffing on bottom half of fillet.



    3. Replace top with slit over stuffing and squeeze fresh lemon juice over fillet. Place in lightly greased pan at 350 degrees for 20-30 minutes.
