Ingredients
1 1/2 lb. spinach
1 qt. strawberries
2 oranges
4 oz. sliced mushrooms
1/3 chopped red onion
2 Tbsp. Feta cheese
4 Tbsp. strawberry rhubarb preserves
3 Tbsp. sugar
1/4 cup raspberry vinegar
Zest of 1/2 orange
Directions
1. Clean and cut all fruits and vegetables.
2. In small bowl, combine sugar, zest, preserves and raspberry vinegar.
3. Whisk until blended.
4. Slowly add olive oil and whish until blended.
