2 qt. mayonnaise
5 smoked jalapenos
5 minced garlic cloves
2 Tbsp. fresh squeezed lime juice
1/4 tsp. salt
1/2 tsp. black pepper
3/4 cup red bell pepper
1/2 tsp. cumin
1. Cut jalapeno peppers in half and remove all seeds. Cold smoke jalapeno peppers in smoker for 1 3/4 hours. Remove from smoker and fine dice.
Note: make sure smoker pot is cold and does not cook the jalapenos.
2. Remove stem and seeds from red bell peppers and fine dice.
3. Mix all ingredients together thoroughly.
4. Label, date and place in cooler until needed.
