Pan Seared Halibut

Ingredients

  • Halibut



    Corn Salsa



  • 1 cup fresh cut corn
  • 2 cups diced tomato
  • 1 Tbsp. chopped garlic
  • 1/4 cup lemon juice
  • 1/2 bunch chopped fresh cilantro
  • 1/3 cup chopped green onion
  • Salt and pepper to taste



    Frozen corn and canned tomatoes may be substituted for quick alternative.

    Directions

    1. Sear halibut in a pan over medium heat with a bit of olive oil.



    2. Sear corn in dry pan and then mix it with remaining ingredients to make a corn salsa.



    3. Serve halibut with corn salsa.
