Spinach and Almond Pasta Salad



  • 3 Tbsp. red wine vinegar
  • 2 Tbsp. honey
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. light mayonnaise
  • 1-1/2 tsp. oregano
  • 1 tsp. minced garlic
  • 16 oz. fusilli pasta
  • 3 cups (loosely packed) baby spinach
  • 2 cups diced tomatoes
  • 1 (10 oz.) pkg. frozen peas, thawed
  • 1 Tbsp. chopped roasted almonds


    1. In small bowl or screw-top jar, combine vinegar, honey, mustard, mayonnaise, oregano and garlic, and whisk or shake to blend.

    2. In a large pot of boiling water, cook pasta according to package directions. Drain.

    3. In a salad bowl, combine pasta with spinach, tomatoes, peas and almonds.

    4. Pour dressing on top and toss well.

    Yield: 4 servings
