Sauted Petrale Sole

Ingredients

  • Seasoned flour - 3 T
  • Egg - 1
  • Sliced mushroom - 4 oz
  • Chopped shallot - 1
  • Chopped herbs, parsley, thyme, chive - 2 T
  • Lemon - 1
  • White wine - 3 oz
  • Oil for cooking - 3 oz
  • Butter - 1 oz
  • Salt and pepper to taste

    Directions

    1. Dip in flour and egg



    2. Saute in hot oil, remove and plate.



    3. Saute shallot and mushroom



    4. Add herbs and butter wine and lemon juice, season and pour over fish.
