Ma Bewley's Crispy Waffles
2 cups flour
Dash of salt
3 tsp. baking powder
1 Tbsp. sugar
2 whole eggs, beaten
1 1/2 cup 2 percent or skim milk
1/2 cup vegetable oil
1. Sift dry ingredients together and set aside.
2. Beat eggs well. Add milk and mix thoroughly with a mixer.
3. Add dry ingredients in three or four portions, beating well after each addition.
4. Add vegetable oil last mixing well. The batter will be thin.
You can add blueberries or other fruits to batter as desired.
To add fiber, you may substitute wheat flour for all or part of the two cups of flour.
Yield: Apx. 6 round waffles
