Grilled Peanut Butter and Jalapeno Chicken
A spicy chicken dish with Southwestern flair!
Ingredients
1 Tbsp. ground coriander
1/2 Tbsp. ground cumin
1/2 Tbsp. black pepper
1 cup chopped onion
2 cloves garlic, or to taste
1/4 cup soy sauce, or to taste
1/4 cup lime juice
1/2 cup smooth peanut butter
1/2 cup vegetable oil
2 or 3 chopped fresh jalapenos
6 chicken breast, boneless and skinless
Directions
1. In a bowl, combine all ingredients, except the chicken.
2. Place chicken in a non-metal bowl and pour the marinade over it. Cover and marinate the chicken at least 1 hour in refrigerator.
3. Remove the chicken from marinade and cook over a hot grill or grill pan until no pink shows when you cut to the bone. Watch the peanut butter so it doesn't burn!
