1 lb. jumbo shrimp, peeled and unveined
1 cucumber, peeled and seeded
15 cherry tomatoes, sliced into halves
1 yellow pepper, seeded and diced
2 green onions, chopped
1 red pepper, roasted
Lime or lemon juice
1/2 cup sake
1. Heat olive oil in skillet. Add shrimp. Saute one minute until pink, turning occasionally.
2. Add cucumber, tomatoes, yellow pepper, green onions, and red pepper. Stir in pan and cook one more minute before adding a pinch of salt, pepper, and a tablespoon of garlic.
3. Add a squirt of lime juice, and a squirt of sake. Saute one additional minute until shrimp are cooked.
4. Arrange on a bed of lettuce. Drizzle with additional sake and lime juice.
