Farraday's Blackened T-Bone Steak
It's blackened on the outside -- and perfectly done on the inside.
24 oz. t-bone steak
2 oz. seasoning blends
4 oz. fresh broccoli
1 1/2 oz. heavy cream
1/2 oz. fresh grated Parmesan cheese
1. Heat grill on high. Place steak on grill, quickly grill both sides to mark the steak.
2. Heat olive oil in a skillet to 400 degrees. Spice the steak on both sides with the Paul Prudhomme seasoning. Place steak in skillet for 2-2-1/2 minutes per side. This will blacken the steak. Steak will be rare. Cook to desired doneness.
3. Steam broccoli for about two minutes and warm the cream. Mix the broccoli with the cream to coat it. Top with the Parmesan cheese.
