Portabella Mushroom and Vegetable Calzone
Are you having the pizza blahs? Try this treat for a change.
Ingredients can vary according to individual tastes. Different ingredients can easily be substituted.
2 portabella mushrooms, sliced
1/2 cup broccoli, sliced
1/2 cup cauliflower, sliced
1/2 cup julienne red onions
1 fresh zucchini, sliced
1 can artichoke hearts, sliced
1 can prepared pizza sauce
6 oz. mozzarella cheese
1 cup ricotta cheese
1 Tbsp. Italian dressing
1 tsp. salt
Garlic to taste
1 soft pizza crust
1. Saute mushrooms, broccoli, cauliflower, onions and zucchini in 1/8 cup olive oil with 2 cloves of crushed garlic. Cook until tender
2. Place pizza crust on table and add sauteed vegetables. Top with rest of ingredients.
3. Fold crust over and use a fork to seal the seam.
4. Bake at 350° for 25 minutes or until hot.
