Almond Coconut Bars

Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3 1/2 Tbsp. cocoa
  • 1 tsp. vanilla
  • 1/2 cup shortening
  • 1 tsp. baking soda
  • 1 cup water
  • 1 stick butter
  • 1/2 cup buttermilk
  • 1 tsp. salt
  • 2 eggs, slightly beaten



    First Icing



  • 1 cup sugar
  • 1 cup evaporated milk
  • 7 oz. coconut
  • 24 large marshmallows



    Second Icing



  • 12 oz. package of semi-sweet chocolate chips
  • 1 cup almonds
  • 1 stick butter, melted



    Directions

    1. Mix dry ingredients in bowl and set aside.



    2. In a large sauce pan, mix butter, water, shortening and bring to a boil. Pour this over flour mixture and stir.



    3. Add remaining ingredients.



    4. Bake in a 9”x13” pan. about 22 minutes at 350 degrees. Cool.



    First Icing



    1. Melt all ingredients in large sauce pan on low heat. Cool slightly.



    2. Pour evenly over cake.



    Second Icing



    1. Mix together and spread on top of cake.
