Ingredients
1 can quartered artichoke hearts, drained
1/2 cup pitted olives
1 diced roasted red pepper
1 cup garbanzo beans, rinsed and drained
1 tsp. dry parsley
Pesto (optional)
Olive oil to taste
Directions
This recipe can be used as a base for several varieties of salad.
1. Mix all ingredients together.
2. Add Romaine lettuce, grilled chicken strips or cooked pasta, depending on what you are in the mood for.
