Chocolate Truffles

  • 3 oz. unsweetened baking chocolate
  • 1 1/4 cup powdered sugar, sifted
  • 1/3 cup margarine
  • 3 egg yolks
  • 1 tsp. vanilla
  • Melted chocolate, ground nuts, candy sprinkles, coconut or any favorite type of candy you would like, crushed up

    1. Melt chocolate in double boiler. Make sure the water is hot but not boiling.

    2. Meanwhile, combine sugar and margarine in mixing bowl, cream together. Add egg yolks one at a time, blend well after each addition. Stir in the 3 oz. chocolate and vanilla.

    3. Chill that mixture in the refrigerator for about 20 minutes or until firm. Break off small pieces, and form into 1/2-inch balls.

    4. Put your favorite crushed coatings in a bowl. Take the chocolate ball and roll around in coating. Allow finished balls to dry and firm on baking sheet about an hour before storing in airtight container in a very cool place.

    These keep about a week.
