1 Julianne onion
1 Julianne green pepper
3-4 garlic cloves
1 diced tomato
4 oz. water
2 whole wheat pitas
1 lb. meatless chicken
1. In medium skillet add green peppers, onions, garlic, water, salt and pepper. Sweat vegetables over medium heat for 2-3 minutes.
2. Add meatless chicken, and sauté for up to 2 minutes or until hot.
3. Cut pita in half forming a pocket.
4. Spread mayonnaise on inside of pocket and stuff with wild greens (Spring Mix), meatless chicken and vegetables.
This is great accompanied by a hot bowl of tomato soup.
