Tomato, Cucumber, Balsamic Vinaigrette Salad

Ingredients

  • 1 cup olive oil
  • 1 cup balsamic vinegar
  • 1/2 cup brown sugar
  • 1 tsp. basil or Italian seasonings
  • 1/2 tsp. crushed red pepper
  • 4 cloves fresh garlic (coarse diced)
  • Salt and pepper to your taste



    Salad Ingredients



  • 1 medium cucumber, sliced
  • 6 roma tomatoes, quartered
  • 1 green onion, diced
  • 1/4 cup mixed red, yellow, and green peppers, diced
  • 1/2 cup parmesan cheese

    Directions

    1. Blend olive oil, balsamic, brown sugar, crushed red peppers, garlic, salt and pepper. Whisk together thoroughly combined.



    2. Add cucumber, tomatoes, onion and mixed peppers. Combine and let marinate in refrigerator for 20-30 minutes.



    3. Top with Parmesan cheese and serve by itself or on your favorite bed of wild greens. Enjoy!!
