3 cup cooked macaroni
3 cup grated white cheddar cheese
4 large eggs
3/4 cup cream
1 1/2 lbs. boneless, skinless chicken strips (light or dark)
8 oz. roasted red pepper strips
1 cup bread crumbs
Salt and pepper to taste
1. In a large mixing bowl beat cream and eggs together, then fold in cheese and macaroni.
2. Preheat oven to 350°.
3. Brush a 2 1/2 quart baking dish with vegetable oil. Spread 1/2 macaroni mixture in dish. Lay chicken strips and pepper strips side by side to cover cheese and macaroni mixture. Top with the other half of mixture and spread breadcrumbs evenly over casserole.
4. Bake for 35 and 40 minutes. Let rest for five minutes before serving.
Yield: 6 to 8 servings
