Wanda and Charlie Peterson have been dishing out food out of this trailer for about nine years, mostly at local events like fairs and festivals.
"When we first started, we had just a little small electric griddle from Walmart and a couple of little deep fryers," said Charlie Peterson, the owner. "The first event was Mardi Gras in Meridian, and we had about a 30-minute wait on an order of fries because people were backed up so far. We knew then we were going to have to get some gas and appliances."
Charlie has built log houses for the last 12 years but decided to trade his hammer in for a spatula. And three weeks ago, the Peterson's opened up the Little Griddle in Marion on a leap of faith. The results have been very good.
"Marion has been really good for us," said Wanda Peterson. "The locals and the workers at the industrial park eat here. They come in and grab a bite to eat and go for lunch. That is a lot of our crowd."
The Little Griddle specializes in food you can normally only get at a fair. There's nachos, cheese fries, homemade hamburgers, hot dogs, and even funnel cakes.
"It's good," said young customer Mackenzie Sweatt, who was eating a funnel cake. "I like the sugar on it."
While most of the customers get their orders to go, there is a pavilion and picnic tables adjacent to the food trailer where you can enjoy your meal. As far as the future is concerned for the Petersons, this is hopefully only the start.
"That is a dream of ours is to have like a mom and pop diner," said Wanda. "Somewhere that you can come in and grab a fresh, hand-patted burger that's really good."
"I know the people very well," said Melissa Brown, a customer. "They're very friendly, and every time I come it's fast, and the food is great."
